I had thought quite a large amount would come from Baguio, to be honest! From research articles I see floating around, a lot of ube/ubi research seems to be done in Bohol. The ubi festival also happens around February. Interestingly enough, most people I asked there said their ubi is kinampay (not sure if true or not). There is a fantastic cafe called Cresencia Café in Baclayon where they serve ubi biko made with the kinampay variety. Perhaps you can ask the owner more about the variety!
